La Bouillabaisse

Source: www.campingclairdelune.fr. Posted on 10 March 2005.

The most famous fish soup of the Mediterranean is bouillabaisse, and its home is considered to be Marseilles, although it is made in every little port throughout the coastal regions of Provence.

The most distinguishing characteristic of a bouillabaisse is not the fish - because all fish soups have fish - but the unique flavoring derived from saffron, fennel seeds, and orange zest.

Le Petit Pierrot de Giens presents a brief history and recipe for the dish that is almost always tried by the fish-lovers who reside as guests in Résidence Les Marronniers.
