The good old 'Salad Nicoise'

Everybody has food favorites. Most are linked to times and places. Mine are arbitrary. Salade nicoise, for example. I like the pronunciation: nee-SWAZZ.
I like the geography - sunny Provence, inspiration to artists, a place I long to visit. I like the flexibility of ingredients: tuna, anchovies, beans, olives, potatoes, capers, hard-boiled eggs, lettuce, olive oil, artichoke hearts - or not.
The taste is far greater than the sum of these parts. What a lunch. What a lunch to eat outdoors.
